Pav M - Acute Eating Disorder ACUTE Center for Eating Disorders & Severe Malnutrition (3M) is the world's only Center of Excellence for the treatment of patients with extreme medical complications resulting from eating disorders and severe malnutrition. Nurses in the ACUTE Center for Eating Disorders play a vital role on the multidisciplinary team providing comprehensive and collaborative care to this patient population.

The ACUTE Center for Eating Disorders is a 30-bed unit with a nurse-to-patient ratio of 1:5. CNAs and behavioral healthcare techs provide 1:1 care and supervision for every patient. This unique population requires both medical and behavioral interventions.

Job Summary

Under minimal supervision, performs inpatient nutrition by assembling food trays for eating disorder patients. Utilizes computer system to process menus and diet information. Performs routine clerical and tray line duties.

Essential Functions:

  • Adjusts and corrects menus according to diet order and patient preferences.
  • Clarifies incomplete or ambiguous diet order efficiently.
  • Performs intake analysis (calorie counts) as assigned.
  • Effectively uses computer software/electronic medical record to perform diet office functions and clinical activities.
  • Performs tray line duties.
  • Maintains clean and organized work area.
  • Effectively handles patient/customer requests and complaints.
  • Discusses patient concerns/problems with the dietitian effectively and timely.
  • Prepares dietary information for use by kitchen personnel in preparation of foods for hospital patients.
  • Measures out oral nutrition supplements for non-completed meals to ensure patients receive the correct amount of calories.
  • Tallies quantities of specific foods, such as vegetables and meats, to be prepared in kitchen.
  • Processes new diets and changes as required.
  • Communicates patient needs to appropriate staff while maintaining patient confidentiality.
  • May answer telephone and intercom calls and relay information to kitchen concerning meal changes, complaints or patient discharge.
  • May prepare and deliver formula and special nourishments to unit pantries.
  • Tastes products, reads menus, estimates food requirements, check production, and keep records in order to accurately plan production requirements and requisition supplies and equipment.
  • Participates in tray line and food temperature monitoring as assigned.
  • Will clean and sanitize work stations and equipment and must follow all Sodexo, client and regulatory rules and procedures.
  • May produce small to large batch goods using advanced and full range of classical and contemporary cooking, plating and garnishing techniques.
  • Under minimal supervision, independently performs cooking duties in preparing food items to be served to customers.
  • May take inventory, and / or enter inventory into the production
  • Performs PI/CQI projects as assigned by supervisor.
  • Attends all allergy and foodborne illness in-service training.
  • Complies with all Denver Health HACCP policies and procedures.
  • Reports all accidents and injuries in a timely manner.
  • Complies with all Denver Health safety and risk management policies and procedures.
  • Participates in regular safety meetings, safety training and hazard assessments.
  • Understands and follows all policies and procedures.
  • Assists in ensuring a safe working environment throughout the facility for all employees.
  • Works with patients and EDO unit staff to ensure satisfaction in such areas as quality, service, and problem resolution.
  • Maintains key control of operations and responsible for activities to ensure opening, closing and daily procedures are completed.
  • Provides the highest quality of service to customers at all times.
  • Other duties as assigned.

Education:

  • Associates degree in nutrition, dietetics, or culinary arts required.
  • Bachelor's degree in nutrition, dietetics, or culinary arts preferred.

Work Experience:

  • One year experience in hospital or extended care facility required.

Certificate

  • Serv Safe certified preferred.

  • Knife skills training required.
  • Significant walking or other means of mobility.
  • Ability to work in a standing position for long periods of time (up to 8 hours).
