Job Description and Duties

Under the direct supervision of the Supervising Correctional Cook, Department of Corrections (DOC), the Correctional Supervising Cook is responsible for the supervision of inmate workers in the preparation of the planned menu and the distribution of food. Ensure that all items needed for meals are present, and in proper amount, and supervise the preparation of meals ensuring that all foods meet standards for quality and wholesomeness. Supervise and instruct inmates in all phases of cooking, proper use and handling of utensils, foods, and equipment; adhere to the standards of sanitation. Verify the proper and accurate institutional count, issue clothing to the inmate cooks, make all assignment for the workday and meals. Adhere to rules and regulations set forth in the institutional procedures, Director's Rules, State laws and regulations, Department Operations Manual and Food Services policies and procedures. Maintain an accurate and comprehensive record of inmate time, ensuring that inmates time is recorded daily, accurately, and properly secured. Inmate Work Incentive Program - ensure all inmates are at their job assignment at all times and that they work at least six and half hour productive work daily. Submit requests for food items. Maintain cleaning schedule, and assign cleaning task to each inmate, and maintain a log of daily activities. Perform other duties as required.

Possession of Minimum Qualifications will be verified prior to interview and/or appointment. Candidates new to CDCR or the Division of Juvenile Justice are required to submit to a background investigation process utilizing Live Scan fingerprinting, and Tuberculosis testing prior to appointment followed by departmental annual Tuberculosis testing/evaluation thereafter.

All methods of appointments will be considered including transfers, reinstatements, and Training & Development (T&D) Assignments. MQ's for the class can be found on www.calhr.ca.gov.

Note: On the Examination/ Employment Application (STD. 678), in the "Examination(s) or Job Title(s) For Which You Are Applying" box, Applications must clearly state how you are eligible for the position (ie, transfer or list eligible). It is up to the hiring authority to accept Training and Development (T&D) assignments. If you are interested in a T&D assignment, you are not required to meet MQs; however, you must indicate T&D as your eligibility when applying in the appropriate box.
